spud Club – How Do you like your potatoes?
David Hamilton Boyd, owner of Folklore and the Kent Mobile Bar Company, has taken on a new challenge, the Spud Club. Situated at the bottom of the Sandgate Road, David ran a catering company before winning awards for his cocktails. Folkelife took a stroll up the road to meet David and find out about his homemade potato waffles.
“For a long time I have thought that there’s a gap in the food offering in Folkestone. What we don’t have is healthy, nutritious, good value food. You can have food from the big chains, and fast food options, but everything we cook here is made by us.”

“We have a range of jacket spuds with classic and more modern twists to them. There’s a really good Bolognese, a green Thai curry on the menu and chana masala. There are a lot of vegan options too. We also make our own potato waffles too, which are rather fun. I take a baked potato, and put it in the waffle press and they come out all crispy and delicious. It’s about delivering good food that’s not deep fried.
“You know that a baked potato is going to fill you up, and we want to offer food that’s not all fried, and is much healthier for you. A baked potato doesn’t break the bank.”
heading up town
“We have been based at the bottom of The Old High Street with Folklore, and did a pop up there for Spud Club to test our menu. Being based here at the end of the Sandgate Road is great. We’re on the crossroads with Guildhall Street, and Rendezvous Street and so we have a good mix of different people coming by. Having traditional fillings means we cater for so many different people. From sausage and beans, which is always a winner, to a Mexican Brunch Waffle which is a fried egg waffle with some really nice chilli and guacamole, and is a great one to try.
“I love playing with flavour, if it’s cocktails or food, I’ve always created new combinations which means I get to experiment and find flavours that work.
